  • Salmon Patties

    Ingredients

    • 1 sm onion
    • 2 can red salmon (16 ounces each), or possibly you can use 3-4 c. cooked fresh salmon
    • 2 lrg Large eggs
    • 1 c. good bread crumbs
    • 2 tsp lemon juice
    • 1/2 x 1 1/2 teaspoon freshly grnd black pepper
    • 1/2 tsp dry dill or possibly 2 sprigs fresh dill
    • 3/4 tsp paprika
    • 3 sprg fresh parsley
    •     canola or possibly extra virgin olive oil

    Directions

    1. Peel onion and coarsely chop in food processor with steel blade. Drain salmon, and add in to food processor (including bones, skin, etc.). Pulse three or possibly four times. Add in Large eggs, 1/2 c. bread crumbs, lemon juice, pepper, dill, paprika and parsley. Pulse till you have a uniform mix, but don't over-process. Put the remaining bread crumbs on a plate, and heat the oil in a large frying pan while you are preparing the patties. Form the mix into patties (3 inches in diameter and about 1/2 inch thick). Coat the patties with the bread crumbs, and put into the warm oil to brown. Brown on each side for about 4 min per side. Serve warm or possibly cool with a good tartar sauce or possibly mustard sauce.
    2. I've had good consistency with all brands of canned salmon. Be sure to include the bones, they are a good source of calcium.
