Salmon Pasta Salad
Ingredients
- 1 pound whole wheat pastas, cooked and drained
- 3 T olive oil
- 2 cans salmon
- 1 chopped bell pepper
- 2 cups frozen peas
- 1 bunch green onions, chopped or any fresh vegetable
- 1 cup Greek yogurt (or cottage cheese)
- 3 T fresh lemon juice
- salt, pepper & cayenne or hot sauce to taste
- 1 T chopped fresh dill
Directions
- Mix yogurt, lemon juice, seasonings and dill.
- Pour over pasta, salmon and vegetables.
- Toss and serve.
