    I decided that we would start the New Year on a healthier note for ourselves and our Carolina HeartStrings “fans” and in an effort to do that I decided to make my first recipe a chopped salad. On a visit to the Big Apple this summer one of my favorite places was called Chop’t Creative Salad Company. OH MY! So much to chose from and wonderful employees just waiting with a big bowl and a chopper to creative my perfect salad. I LOVED IT. Here is my own little version of one of the many on the menu.

    Ingredients

    • 1 cup raw kale
    • 1 cup raw spinach leaves
    • 1 cup assorted field greens
    • 1 cup mushrooms
    • 1/2 cup carrots
    • 1/2 cup radishes
    • 1/4 cup almond slices
    • 1/4 cup Craisins
    • 1 package (2.4 ounces or 1/2 cup) salmon
    • 1/2 cup salad dressing (whatever your favorite is)

    Directions

    1. In a large bowl combine kale, spinach and field greens, using a chopper, chop the greens into a small uniform size. Using a cutting board or a separate bowl with a chopper, chop the mushrooms, carrots, radishes, Craisins and almond slices until they are all smaller and uniform in size. Dump them into the large bowl of greens and stir to combine. Mix in the salmon and serve your favorite dressing on the side or stir in to combine and evenly coat the salad ingredients. Makes 4 cups.
