    To find recipes that are tasty, healthy and diabetic-friendly can be quite a challenge.But this one is all that and more.Filled with protein and nutrition,It is also very easy to prepare.You can serve this as a salad or else you could use this as filling for wraps or twisters.

    Ingredients

    • SALAD
    • 4 boiled eggs
    • 1/2 cup sliced onion
    • 1/2 cup sliced tomato
    • 2 tbsp spring onion, chopped
    • 2 tbsp coriander, chopped
    • 2 tbsp carrot, chopped
    • SALAD DRESSING
    • 4 tbsp plain yogurt
    • 1 tsp lime juice
    • Salt and pepper to taste

    Directions

    1. Separate the egg whites from the egg yolks.
    2. Cut the egg whites into cubes.
    3. Mix the chopped vegetables into the egg whites.
    4. Top it with the salad dressing and serve.
    5. If you wish you could use this salad as filling in any of your wraps.
    6. Just apply a very thin layer of tomato ketchup,followed by 1 or 2 lettuce leaves and then the filling and finish it with some sweet free mayo.It will serve as a full fledged meal for 2!.
