EGG WHITE PROTEIN SALAD
To find recipes that are tasty, healthy and diabetic-friendly can be quite a challenge.But this one is all that and more.Filled with protein and nutrition,It is also very easy to prepare.You can serve this as a salad or else you could use this as filling for wraps or twisters. Ingredients
- SALAD
- 4 boiled eggs
- 1/2 cup sliced onion
- 1/2 cup sliced tomato
- 2 tbsp spring onion, chopped
- 2 tbsp coriander, chopped
- 2 tbsp carrot, chopped
- SALAD DRESSING
- 4 tbsp plain yogurt
- 1 tsp lime juice
- Salt and pepper to taste
Directions
- Separate the egg whites from the egg yolks.
- Cut the egg whites into cubes.
- Mix the chopped vegetables into the egg whites.
- Top it with the salad dressing and serve.
- If you wish you could use this salad as filling in any of your wraps.
- Just apply a very thin layer of tomato ketchup,followed by 1 or 2 lettuce leaves and then the filling and finish it with some sweet free mayo.It will serve as a full fledged meal for 2!.
