Roasted Red Pepper Pseudo Hummus
Delicious, quick and easy, no-cook appetizer. Perfect for a party or for everyday. Ingredients
- 1 (15-ounce) can chickpeas, drained and rinsed
- 2 cloves garlic
- 2 tablespoons fresh lemon juice
- 1/3 cup olive oil
- Salt &black pepper
- 1 teaspoon dried oregano
- 2 slices of jarred roasted red pepper in oil ( approx. a 1/3 cup)
Directions
- Put all ingredients into a food processor and blend until pureed. Serve in a dish with crackers, fresh veggies, or pita chips.
