Roasted Red Pepper Hummus
Ingredients
- 2 x cloves garlic, peeled
- 2 x red bell peppers, seeded and quartered
- 1/4 c. Reserved roasted pepper juice
- 16 ounce cooked chickpeas, liquid removed and rinsed
- 4 Tbsp. lemon juice
- 2 Tbsp. Tahini
- 1 tsp grnd cumin
- 2 dsh Tabasco sauce, or possibly more to taste
- 1 tsp salt, or possibly less
- 1 Tbsp. fresh cilantro, coarsely minced
- sliced green onions
- 4 x pita bread rounds, warmed
Directions
- 1) Roast garlic and pepper for 15 min in a preheated 400F oven. Remove, cold completely and peel the peppers over a pan so which you can collect the juice. Set aside.
- 2. In a food processor, puree 1/4 c. reserved pepper juice with chickpeas.
- 3. Add in the roasted peppers and garlic. Add in lemon juice, tahini, cumin, warm sauce, and salt. Puree 2 min.
- 4. Blend in cilantro. Pour into a bowl. Garnish with onions. Serve with warmed pita.
- Serves 4 or possibly more.
