  • Roast Turkey With Sweet Potato Apple Hash And Sweet Wine Sauce

    Ingredients

    • 1 1/2 tsp extra virgin olive oil
    • 4 slc bacon, cut into matchsticks
    • 1/2 c. minced onion
    • 2 c. sweet potato, peeled, diced
    • 1 c. Granny Smith apple, peeled, diced
    • 1 c. chicken broth
    • 2 Tbsp. Frangelico
    • 1/4 tsp fresh thyme, minced
    • 1/4 tsp fresh rosemary, minced
    • 2 lb breast of turkey, boneless
    •     Sauce
    • 1 c. plus 2 tbsp. dry sweet white wine
    • 2 tsp shallot, chopped
    • 1/2 tsp garlic, chopped
    • 4 c. chicken broth
    • 1/4 tsp fresh thyme, minced
    • 2 tsp cornstarch

    Directions

    1. Preheat oven to 450 degrees Fahrenheit.
    2. Heat 1teaspoon extra virgin olive oil in large non-stick skillet over medium heat.
    3. Add in the bacon and saute/fry till it begins to brown, about 2 min.
    4. Add in the onion and saute/fry till tender, about 4 min.
    5. Add in the sweet potatoes and apple and saute/fry 2 min.
    6. Add in the stock and liqueur and bring to a boil.
    7. Fold in thyme and rosemary. Set aside.
    8. Place turkey breast in a large glass baking dish and rub with remaining 1/2 tsp. extra virgin olive oil.
    9. Sprinkle with salt and pepper.
    10. Roast the turkey for 10 min.
    11. Spoon hash mix around turkey and continue roasting till a meat thermometer inserted into the thickest part of the turkey registers 165 degrees and hash is tender, stirring occasionally, about 25 min longer.
    12. Sauce:Combine 1cup sweet wine, shallots and garlic in a heavy large saucepan and boil till reduced by half, about 8 min.
    13. Add in broth and boil till reduced by half, about 20 min.
    14. Fold in thyme, cornstarch and the remaining 2 Tbsp. of wine in a small bowl.
    15. Add in the cornstarch mix to sauce and bring to a boil, stirring occasionally.
    16. Slice turkey and arrange on platter, and spoon the hash mix around.
    17. Spoon sauce over turkey and serve.
    18. Season to taste with salt and pepper.
