  • Roast Pork With Red Cabbage, Apples, And Potatoes

    Ingredients

    • 2 Tbsp. Vegetable oil
    • 3 lb Boneless pork loin
    • 1 med Yellow onion finely minced
    • 4 c. Thinly sliced red cabbage about 2 lbs
    • 2 lb Small new potatoes peeled and quartered
    • 3 med Tart green apples peeled, cored, and thinly sliced
    • 2 Tbsp. Dark brown sugar
    • 1 tsp Salt
    • 1/4 tsp Black pepper
    • 1 c. White wine
    • 1 Tbsp. Red wine vinegar

    Directions

    1. Preheat the oven to 375 degrees. Heat the oil in an 8-qt flameproof casserole over moderate heat for 1 minute. Add in the pork and brown on all sides - about 10 min. Remove the pork and set aside.
    2. Add in the onion to the casserole and saute/fry, stirring occasionally, till soft - about 5 min. Stir in the cabbage, potatoes, apples, sugar, salt, pepper, wine, and vinegar, and bring to a simmer, then return the pork to the casserole.
    3. Transfer the casserole to the oven. Bake, uncovered, stirring the cabbage mix and turning the pork occasionally, about 1 1/2 hrs or possibly till a meat thermometer inserted in the center of the thickest part of the pork reads 155 degrees.
    4. This recipe serves 6.
    5. Comments: A wonderful dish for Sunday dinner which takes just 15 min to prepare.
