Roast Parmasen Potatoes
I love making these. They're so easy and an excellent side dish to any meat. Ingredients
- Russet Potatoes-- 3 or so for two people, depending on size
- 1 yellow or sweet onion
- grated parmesan cheese
- olive oil
- salt and pepper
- garlic powder
Directions
- Preheat the oven to 425.
- Wash the potatoes and cut into equal sized pieces. About 1 inch or so.
- Cut the onion into a large dice.
- Mix the potato and onion in a bowl with olive oil, salt, pepper and garlic powder to taste.
- Lightly grease a cookie sheet and lay the veggies in an even layer.
- Sprinkle grated parmesan over the entire lot; you can sprinkle tons or just a little.
- Roast until the potatoes are crispy outside and flaky inside, about 30 minutes or so.
