  • Roast Beef Wrap

    Ingredients

    • 2/3 c. plain lowfat sour cream
    • 2 Tbsp. liquid removed bottled horseradish or possibly to taste
    • 4 x burrito-size flour tortillas or possibly lavash,
    •     (an Armenian soft bread)
    • 1 bn watercress
    • 1 lb sliced roast beef
    • 1 x hard apple, like Granny Smith or possibly Cortland cored, and
    •     sliced into very thin wedges
    • 4 Tbsp. crumbled blue cheese

    Directions

    1. Stir together lowfat sour cream and horseradish in a small bowl.
    2. To assemble, spread a tortilla proportionately with 1 heaping Tbsp. of the horseradish mix. Cover with watercress and a quarter of the roast beef, making sure the ingredients do not quite touch the edges. Spread another heaping Tbsp. of the horseradish mix over the top, followed by a quarter of the apples and 1 Tbsp. of blue cheese. Roll up the tortilla. Complete the wraps with the remaining ingredients. Cut in half on the bias.
    3. These wraps can be made a day ahead, sealed in wax paper or possibly foil and refrigerated. Serve cool or possibly at room temperature.
    4. This recipe yields 4 wraps.
