Roast Beef Wrap
Ingredients
- 2/3 c. plain lowfat sour cream
- 2 Tbsp. liquid removed bottled horseradish or possibly to taste
- 4 x burrito-size flour tortillas or possibly lavash,
- (an Armenian soft bread)
- 1 bn watercress
- 1 lb sliced roast beef
- 1 x hard apple, like Granny Smith or possibly Cortland cored, and
- sliced into very thin wedges
- 4 Tbsp. crumbled blue cheese
Directions
- Stir together lowfat sour cream and horseradish in a small bowl.
- To assemble, spread a tortilla proportionately with 1 heaping Tbsp. of the horseradish mix. Cover with watercress and a quarter of the roast beef, making sure the ingredients do not quite touch the edges. Spread another heaping Tbsp. of the horseradish mix over the top, followed by a quarter of the apples and 1 Tbsp. of blue cheese. Roll up the tortilla. Complete the wraps with the remaining ingredients. Cut in half on the bias.
- These wraps can be made a day ahead, sealed in wax paper or possibly foil and refrigerated. Serve cool or possibly at room temperature.
- This recipe yields 4 wraps.
