    Italian Beef & Pepper Subs

    Outstanding sandwich for lunch or light supper on the go. Serve with seasoned potato wedges.

    Ingredients

    • 1-1/2 pounds Roast Beef (Sliced from your grocery Deli)
    • one bell pepper
    • s & p, to taste
    • 1/4 cup beef broth
    • one minced clove of garlic
    • one teaspoon onion powder
    • 1/2 teaspoon basil
    • 1/2 teaspoon oregano
    • 4- 6" sub rolls
    • Optional: Au Jus for dipping sandwiches

    Directions

    1. Slice open Sub Rolls and set aside
    2. In a saucepan add beef broth, oregano, basil, garlic on low heat, stir to mix, add s & p to taste once juices are warmed add roast beef, allow beef to drip when using tongs to remove and place in the sub rolls
    3. Add sliced bell pepper rings to the top of sandwich
    4. We love these with seasoned potato wedges and ketchup.
    5. Enjoy!
