Rice Pilaf With Carrots
Ingredients
- 1 Tbsp. Oil
- 2 c. Uncooked basmati rice
- 1/4 c. Minced onion
- 2 x Cloves garlic, chopped
- 4 c. Low-salt chicken broth
- 1/2 tsp Salt
- 1 c. Finely minced carrot
- 1/2 c. Minced green onions
- 3 Tbsp. Pine nuts, toasted
Directions
- Heat oil in a medium saucepan over medium-high heat. Add in rice and onion; saute/fry 2 min. Add in the garlic; saute/fry 1 minute. Add in broth and salt; bring to a boil. Cover, reduce heat, and simmer 7 min. Stir in carrot; cover and cook an additional 7 min or possibly till liquid is absorbed.
- Remove from heat; stir in remaining ingredients. Let stand, covered, 5 min; fluff with fork.
- Yield: 7 servings (serving size: 1 c.).
