    Rice-Lentil Salad-is an easy recipe for a side salad. Takes only 10 minutes to prepare. Main ingredients are white rice, lentils, celery, bell peppers, parsley and chicken broth served over lettuce leaves with a vinaigrette dressing. It is also a healthy, low calories, No-Fat, No Cholesterol, low sodium, heart-healthy and Weight Watchers (3) PointsPlus per serving recipe.

    Ingredients

    • (1-3/4) cups chicken broth
    • 1/2 cup uncooked long grain white rice
    • 1/3 cup dried lentils
    • 2 tbsp chopped fresh parsley
    • 1 dash cayenne pepper
    • 1/2 cup sliced celery
    • 1 medium size red onion, chopped
    • 1/2 cup diced bell pepper (red or green)
    • 1/2 cup fat free vinaigrette salad dressing
    • 6 lettuce leaves

    Directions

    1. Heat broth to a boil in a 2-quart saucepan over medium-high heat. Stir in rice and lentils. Reduce heat to low. Cover and cook 20 minutes or until done. Let stand 5 minutes or until liquid is absorbed.
    2. Toss the lentil mixture, parsley, cayenne pepper, celery, onion, green pepper and vinaigrette together in a large bowl until evenly coated. Cover and refrigerate for at least 2 hours or overnight. Season to taste. Serve over the lettuce leaves.
