    Freshly caught Red Snapper served with Bacon and Cheddar Cheese Grits,And tender Green Beans.It Doesn't get much better than this ..It's A Party in your Mouth ...ENJOY !!

    Ingredients

    • Six 6 ounce Snapper Fillets
    • 1/4 tsp cayenne pepper
    • 1 tsp black pepper
    • 1 tsp onion powder
    • 1/2 tsp dried thyme
    • 1 tsp garlic powder
    • 1 tsp dried basil
    • 1/4 tsp oregano
    • 3 tbls butter
    • 1 tbls good olive oil
    • salt to taste
    • Bacon Cheddar cheese grits
    • 10 ounces chicken stock
    • 2 cups uncooked Grits
    • 8 ounces raw chopped shrimp
    • 1/2 stick butter
    • 5 tbs chopped Bacon
    • 5 ounces Cheddar Cheese
    • 4 tbls chopped scallions

    Directions

    1. On a large piece of wax paper mix all ingredients except butter and olive oil
    2. In medium sauce pan melt butter and oil
    3. brush fish on both sides with seasoning mixture
    4. In a large cast Iron skillet drizzle some of the oil and butter mixture
    5. make sure the pan is very hot ,place fillets in pan and cook till deeply browned
    6. drizzle remaining butter oil mixture and flip fish over
    7. cook another five minutes
    8. remove and season with salt
    9. Put chicken stock in a large saucepan add grits and butter add shrimp,bacon and at the very end add cheese..on a serving plate place grits put fish on the top and sprinkle with scallions .serve green beans on the side !!!
