  • Red Velvet Shortbread Cookies

    Holiday Baking - 2010 Perfect for any Holiday Party you have planned this Holiday Season

    Ingredients

    • 1 1/4 cups flour
    • 1/3 cup sugar
    • 2 tbsp unsweetened cocoa powder
    • 1/4 tsp salt
    • 1/2 cup butter, cut up
    • 1 tbsp red food coloring
    • 2 ounces white baking chocolate with cocoa butter, coarsely chopped
    • 1 tsp shortening

    Directions

    1. Preheat the oven to 325 F
    2. In a food processor, combine the flour, sugar, cocoa powder, and the salt
    3. Cover and process until combined
    4. Add the butter and food coloring
    5. Cover and process using on-off pulses until the mixture resembles fine crumbles and starts to cling
    6. Continue processing just until the mixture forms a ball
    7. On a lightly floured surface, gently knead the dough until nearly smooth.
    8. Roll or pat the dough until 1/4 inch thick
    9. Cut the dough using a floured 1 1/2 inch scalloped round cookie cutter
    10. Place the cutouts 1 inch apart on an ungreased cookie sheet
    11. Bake in the preheated oven about 20 minutes or until the centers are set
    12. Trasnfer the cookies to a wire rack and cool
    13. In a small saucepan, combine the white chocolate and shortening.
    14. Cook and stir over low heat until melted
    15. Drizzle the cookies using the melted white chocolate
    16. Let stand until the chocolate sets
