Red Velvet Shortbread Cookies
Holiday Baking - 2010 Perfect for any Holiday Party you have planned this Holiday Season Ingredients
- 1 1/4 cups flour
- 1/3 cup sugar
- 2 tbsp unsweetened cocoa powder
- 1/4 tsp salt
- 1/2 cup butter, cut up
- 1 tbsp red food coloring
- 2 ounces white baking chocolate with cocoa butter, coarsely chopped
- 1 tsp shortening
Directions
- Preheat the oven to 325 F
- In a food processor, combine the flour, sugar, cocoa powder, and the salt
- Cover and process until combined
- Add the butter and food coloring
- Cover and process using on-off pulses until the mixture resembles fine crumbles and starts to cling
- Continue processing just until the mixture forms a ball
- On a lightly floured surface, gently knead the dough until nearly smooth.
- Roll or pat the dough until 1/4 inch thick
- Cut the dough using a floured 1 1/2 inch scalloped round cookie cutter
- Place the cutouts 1 inch apart on an ungreased cookie sheet
- Bake in the preheated oven about 20 minutes or until the centers are set
- Trasnfer the cookies to a wire rack and cool
- In a small saucepan, combine the white chocolate and shortening.
- Cook and stir over low heat until melted
- Drizzle the cookies using the melted white chocolate
- Let stand until the chocolate sets
