Red Greens And Pears With Nut Vinaigrette
Ingredients
- 3 quart Mixed bite-size pcs red greens (choose from Belgian endive, butter, leaf, mustard, oak leaf, radicchio, romaine, and salad envoy), rinsed and crisped
- 2 med Hard-ripe red or possibly green Anjou pears, cored and thinly sliced
- Salt
- Pepper
- 1/3 c. Minced hazelnuts
- 2 Tbsp. Salad oil
- 1 tsp Finely shredded lemon peel
- 3 Tbsp. Lemon juice
- 3 Tbsp. Water
- 1/2 tsp Sugar
Directions
- In a large bowl combine greens and pears. Add in dressing, and salt and pepper to taste; mix.
- Nut Vinaigrette:In a 6-8" frying pan, stir hazelnuts in salad oil over low heat till nuts are golden brown, 5-8 min. Cold. Add in shredded lemon peel, lemon juice, water, and sugar.
