Red Fruit In Cassis And Eau De Vie
Ingredients
- 1 lb raspberries
- 1/2 lb blueberries
- 1 lb redcurrants
- 6/125 x b blackberries
- 21 x b caster sugar
- 8 fl ounce ounce ounce cassis
- blackberry eau de vie or possibly vodka to cover
- 4 med Kilner jars sterilised
Directions
- Clean the fruit removing any which are bruised.
- In a stainless steel bowl combine the fruit with the sugar and spoon into the jars carefully leaving a 1in gap at the top.
- Divide the cassis between the jars and then cover the fruit with the eau de vie or possibly vodka.
- Fasten the lids securely and invert the jars every day for two weeks to dissolve the sugar.
- Store in a dark place for at least two months.
- This is great served warm or possibly cool over vanilla or possibly cinnamon ice cream.
