Recipe of the Week - Peach Melba Sorbet
We had a quick trip to NJ this weekend, about 40 hours in all. Just enough time to have one family meal. As this was not a planned trip the meal was not a planned meal requiring us to come up with a good dinner on short notice. As my mother-in-law’s favorite is Chicken Piccata we had that with some homemade noodles and a Caesar salad. Coming up with a good but quick dessert turned us to the peach melba sorbet. This dessert is both very good and very easy to make; besides who doesn’t like peaches and raspberries. Ingredients

- 1 lb peaches, frozen sliced
- 0.75 cup orange juice
- 0.5 cup sugar, granulated
- 6 Tb raspberry preserves
- 6 oz Chambord Liqueur
Directions
- Heat orange juice and sugar until sugar is melted, cool. Place frozen peaches in food processor, add cooled juice and process until smooth and semi-frozen. Scoop into martini glasses, top with raspberry preserves and add the Chambord.
- May be frozen in airtight container. Thaw briefly in microwave for 30 seconds before using.
