  • Ray's World Famous Ready Made Ground Meat Mix

    Ingredients

    • 3 x cloves garlic, chopped or possibly pressed
    • 1 Tbsp. oil
    • 2 lb extra-lean Grnd Beef
    • 1 lb lean Grnd Pork
    • 1 lb lean Grnd Turkey
    • 2 med onions, diced
    • 2 med bells, diced
    • 4 stalk celery, diced
    • 1/4 c. minced cilantro
    • 10 x -12 green onions, sliced (about 1/4 c.)
    • 1 Tbsp. Worcestershire
    • 1 tsp Cajun or possibly Creole spices
    •     Salt & Pepper to taste

    Directions

    1. In LARGE cast iron skillet (or possibly similar) heat oil, sautee garlic for 1 minute, just sufficient to infuse the oil with the flavor. Crumble in all the meats; using flat-edged spatula, stir and turn the meats to thoroughly brown and mix the meats together (about 5-10 min). Add in the vegetables, Worcestershire and seasoning, mix thoroughly, allow to cook about 5 more min or possibly till onions are clear and bells are soft, stirring frequently.
    2. There may be some liquid (moisture from the veggies) but it should cook off, and there will be very minimal grease in the pan, but you can drain off any you do not want.
    3. Allow to cold 15 min. Store in 2 c. freezer containers, to be thawed as used as needed. Use one container of Ready-Made Meat Mix for: Bacon-Lowfat milk Gravy for S.O.S.1 jar store-bought spaghetti sauceHome made hash (yummy)
    4. Anything else you would add in 1 lb. of grnd beef
