    Plum, grapes veggie Shepherd's Pie

    It had started to get chilly so I decided to bake Shepherd's Pie for dinner. Traditional pie has a lamb/beef base but it is a little challenging to get either easily in India. Also, my in-laws like other Hindus would rather not have beef in the house so I decided to use goat mince instead. Also, there were few plumps in the refrigerator so I thought to give a twist to the original recipe and add some healthy plumps, grapes and veggies to the dish. In addition, I also made certain other variations and it all worked out beautifully! Give it a try!

    Ingredients

    • For base
    • 0.5 pound ground goat meat
    • 1 medium sized onions
    • 1 medium ripe tomatoes
    • 1 sweet plum
    • 1/4 cup diced carrot
    • 1/4 cup diced green beans
    • 1/4 cup diced bell peppers
    • 1/8 cup seedless grapes
    • 1 tsp cumin seeds
    • 1 tbsp dried mango powder(optional)
    • 1 tbsp dried parsley
    • 1 tsp 21 seasoning mix (easily available in trader Joe's or you can use Kitchen king instead)
    • 50 gm butter
    • 1/4 cup oil
    • 2 tbsp all purpose flour/maida
    • Salt to taste
    • For potato crust
    • 250 gm/0.5 pound Hard boiled potatoes
    • 50 gm + 30 gm butter
    • 1/5 cup milk
    • 1 tbsp Ginger-Garlic Paste
    • Salt to taste

    Directions

    1. Make a puree of plums and grapes and set aside.
    2. Heat oil in a frying pan and add cumin seeds for tempering, when it starts to crackle, add finely chopped onions to it.
    3. Cook until onions turn slightly translucent.
    4. Add ground goat meat and mix well.
    5. Cook at low heat until the meat starts to change color.
    6. Add salt.
    7. Mix finely chopped tomatoes and plum-grape puree, let it cook on low heat.
    8. In 10 min when the water has dried up, add mango powder, parsley,21 seasoning mix and saute for 2 min.
    9. Add carrots, beans and bell peppers.
    10. Put butter and fold it well into the meat.
    11. Now turn off the heat and mix all purpose flour.
    12. Set this aside
    13. For crust-
    14. Mash potatoes well.
    15. Heat 50 gm butter in the pan and add potatoes to it.
    16. Add milk and blend it well in the pan so that milk gets evenly incorporated.
    17. Mix ginger garlic paste and fry for 2 more min.
    18. Turn off the heat and add 30gm butter. Mix well.
    19. Layer a oven proof dish with cooked meat, on top of it layer the potato mix flatten it with a wet spatula. Bake at 200 C until oil starts to bubble on the sides and the dish starts to separate from the sides(roughly 1/2 an hour).
