  • Raspberry Chocolate Cheesecake

    Ingredients

    • 1 (8 ounce) pkg. chocolate wafer cookies, crushed fine
    • 1/2 stick butter, melted
    • 2 T sugar
    • Dash of nutmeg
    • 3 (8 ounce) cream cheese, softened
    • 1 c. sugar
    • 1 teaspoon vanilla
    • 4 large eggs
    • 1 c. fresh or possibly individual frzn raspberries
    • 1 teaspoon butter
    • 1 ounce unsweetened chocolate
    • 1/4 c. powdered sugar
    • 1 teaspoon dark corn syrup
    • 1 T cream or possibly evaporated lowfat milk
    • 2 T very warm water

    Directions

    1. Preheat oven to 325 degrees. In medium bowl, beat cream cheese till fluffy. Add in sugar and vanilla gradually. Add in large eggs, one at a time, beating well after each. Mix in raspberries. Pour into chocolate crust. Bake for approximately 1 hour. Cool completely and chill.
    2. Put together in pan and heat over low heat, stirring constantly. Remove from heat and add in 1/2 tsp vanilla. Pour over chilled cheesecake. Chill at least 4 hrs before serving.
