Pumpkin Chocolate Chip Muffins
My son made this with his second grade class last week. They had a great time and the muffins came out yummy! Ingredients
- 3 1/2 cups sifted flour
- 1 1/2 tsp cinnamon
- 3 cups sugar
- 1/2 tsp nutmeg
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 cup oil
- 2 cups pumpkin
- 3/4 cup water
- 4 eggs
- 1 1/4 cups chocolate chips
Directions
- Stir all dry ingredients together in a large bowl.
- Mix water, eggs, oil and pumpkin in a separate bowl.
- Make a well in the center of dry ingredients and add wet ingredients. Mix well.
- Stir in chocolate chips and pour into line muffin tins.
- Bake at 375 degrees for 18 minutes.
- To make loaves instead of muffins, pour batter into 2 greased loaf pans and bake for 1 hour at 350 degrees.
