  • Puerto Rican Pork And Beans

    Ingredients

    • 1 Tbsp. Canola oil
    • 6 x Pork loin spareribs
    • 1 med Carrot -- 1/2" cubes
    • 2 med Onions -- cubed
    • 6 x Cloves garlic -- peeled,
    •     Minced
    • 3 x Bay leaves
    • 1 tsp Oregano
    • 1 lb Can whole tomatoes
    • 1 sm Jalapeno pepper -- minced
    • 2 tsp Salt
    • 1 lb Dry kidney beans --
    •     Washed
    • 1 bn Cilantro -- * see note

    Directions

    1. Heat the oil in a sturdy saucepan. When it is warm, add in the pork in one layer and cook it over medium heat for about 30 min, turning it till it is brown on all sides. Add in 4 c. cool water and all the remaining ingredients except the minced cilantro leaves. Bring to a boil, reduce the heat to low, cover, and simmer gently for 1+3/4 to 2 hrs, till meat is tender. Divide among four individual plates, sprinkle with the minced cilantro leaves, and serve with Yellow Rice. @Nutritional analysis per
