    This is not an Irish dish. There is a dispute between Boston and Manhattan as to what restaurant in which city was the first to make it. I would guess the first person to make it was some home cook trying to use up the odd bits in the larder and deciding this was good enough to repeat. I would also guess that it dates back to at least the mid-1900�s. If it was more recent it would have bacon and / or cheese. (Both of which I have added on occasion�.) Click here to Pin Potatoes O�Brien Print Potatoes O�Brien This is a great potato side dish � for breakfast, lunch or dinner. We love it with poached or fried eggs on top. Author: Kate Prep Time: 5 minutes Cook Time: 15 minutes Total Time: 20 minutes Yield: 2 servings 1x Category: Potatoes Ingredients Scale 1x2x3x 2 medium potatoes, 10oz (300gr), cut into bite-size pieces 1/2 green or red pepper or a bit of both, chopped 1 medium onion, chopped 1 tbs olive oil 1 tbs fresh garlic chives, chopped 1 tbs fresh oregano, chopped salt & pepper Instructions Heat oil in a medium skillet over medium heat. Add vegetables and sauté until potatoes are browned and onion and peppers are cooked, stirring often. This takes 12 � 18 minutes, depending on size of veggies and heat. Add the herbs a minute or so before finishing. Salt & pepper if desired, and serve. Notes Add red pepper, cayenne, or hot chilies if you want some heat.
