    Potato Carrot Vegetable Soup

    clear buttery soup containing pieces of potatoes and carrots, infused with an undertone of spices.

    Ingredients

    • For the spice bundle
    • 1/2 tsp coriander seeds
    • 1/2 tsp cumin seeds
    • 1/2 tsp black pepper seeds
    • 1 stick cinnamon
    • 1 star anise
    • 2 cloves
    • 1 cardamom
    • Wrap and bundle these spices in a little piece of muslin cloth
    • 2 potatoes - cubed into medium size pieces
    • 1 carrot - cubed into medium size pieces
    • 4 shallots - chopped
    • 1 1/2 tbsp salted butter
    • 2 sprigs garden or Chinese parsley
    • 1/2 liter vegetable stock
    • Pepper and salt for taste

    Directions

    1. When butter is heated, sauté shallots.
    2. Pour in stock, spice bundle and vegetables.
    3. Simmer till veggies are soft.
    4. Season with pepper and salt.
    5. Garnish with parsley before serving.
