Potato Carrot Vegetable Soup
clear buttery soup containing pieces of potatoes and carrots, infused with an undertone of spices. Ingredients
- For the spice bundle
- 1/2 tsp coriander seeds
- 1/2 tsp cumin seeds
- 1/2 tsp black pepper seeds
- 1 stick cinnamon
- 1 star anise
- 2 cloves
- 1 cardamom
- Wrap and bundle these spices in a little piece of muslin cloth
- 2 potatoes - cubed into medium size pieces
- 1 carrot - cubed into medium size pieces
- 4 shallots - chopped
- 1 1/2 tbsp salted butter
- 2 sprigs garden or Chinese parsley
- 1/2 liter vegetable stock
- Pepper and salt for taste
Directions
- When butter is heated, sauté shallots.
- Pour in stock, spice bundle and vegetables.
- Simmer till veggies are soft.
- Season with pepper and salt.
- Garnish with parsley before serving.
