Potato Blini With Sour Cream And Caviar
Ingredients
- 2 lrg Large eggs separated
- 1 lrg potato finely grated
- 9 Tbsp. all-purpose flour
- 2 Tbsp. whipping cream
- 1 tsp salt
- 1/2 tsp freshly-grnd black pepper
- Vegetable oil as needed
- Lowfat sour cream for serving
- Caviar for serving
Directions
- Beat egg whites at medium speed with an electric mixer till stiff peaks form.
- Whisk egg yolks till thickened. Stir in potato and next 4 ingredients. Mix in egg whites.
- Pour oil to depth of 1/2 inch in a large heavy skillet; heat to 350 degrees. Drop potato mix by teaspoonfuls into warm oil; fry, in batches, 1 to 2 min on each side or possibly till golden brown. Drain on paper towels. Serve immediately with lowfat sour cream and caviar.
