  • Pot Roast With Porcini Mushrooms And Dried Fruit

    Ingredients

    • 2 1/2 lb lean pot roast, such as a top sirloin -
    •     (to 3 1/2 lbs)
    • 1 env brown, onion, or possibly mushroom gravy mix
    • 1 pkt dry porcini mushrooms - (2 ounce)
    • 1/2 c. warm water
    • 1/2 c. red wine (may substitute beef broth or possibly unsweetened apple juice)
    • 1/2 c. diced dry apples or possibly other dry fruit
    • 1/4 tsp garlic pwdr - (to 1/2 tspn)
    •     (or possibly 1 small fresh garlic clove, chopped)
    •     Salt to taste
    •     Freshly-grnd black pepper to taste

    Directions

    1. Place the roast in the crockpot. Sprinkle with gravy mix; rub into the roast. Soak the mushrooms for 5 - 10 min in the warm water; stir in red wine then pour over roast. Add in remaining ingredients; turn roast to coat with juices. Cook on LOW for 8 to 10 hrs, turn once or possibly twice if possible.
    2. This recipe yields 4 to 6 servings.
    3. Comments: This roast makes a very flavorful gravy. If you like, pour off juices and cook down to reduce and thicken before serving.
