  • Pork Chops, Orange Mustard Marinade; a good dog

    Ingredients

    • 2 – 4 pork chops, depending on size 12oz (350gr) total if boneless
    • 3 tbs orange juice
    • 2 tbs whole grain mustard
    • 1 tbs Dijon-style mustard
    • 1/2 tsp garlic powder
    • 2 tbs olive oil

    Directions

    Those of you who read this blog know I’m not a fan of fruit with meat.

    I make an exception for lemons….. Lemons and capers can improve almost anything. Or lemon and browned butter. Or just a squeeze of lemon.

    Oranges, cherries, and peaches, don’t get on or near meat in my kitchen.

    Until now, that is.

    It would appear that I am now making an exception for orange juice.

    Honey and mustard are a popular flavor duo.

    But honey can burn…. Why not orange juice? It’s not quite as sweet and I only used a little bit.

    Do I sense change in the air?

    Probably not.

    In small bowl stir together juice, mustards, garlic and oil.

    Spoon over chops and set aside while the grill heats.

    Remove from marinade and cook on barbecue 10 – 15 minutes turning once.

    Baste with any remaining sauce before turning.

    Notes

    Used minced garlic in place of garlic powder…. I just try to do everything easy in the summer. Cook time does not include marinating time which can be as little as 10 minutes on the counter or a few hours in the fridge.

    Dogs have routines.

    Like humans, they are happiest when they know what there day is going to be like.

    Guapa has gotten her routines very finely tuned in the 10 months that she has been an only dog. There is no longer any decisions to be made about which dog will sleep in which doorway at any given time. All the doorways are hers at the time she chooses.

    We actually could get rid of all of our clocks.

    Is she diagonally across the hall door? Must be breakfast time. Between my exercise bike and the freezer is early afternoon. Mid-afternoon she’s stretched across the kitchen doorway. Next to the stairs is her after-dinner (her dinner) spot. She moves to between mon mari’s chair and the TV when it’s time for tea – and her tea treats.

    This, however, is the most important spot:

    And her most important jobs: making sure that mon mari properly prepares his lunch and catching any cheese that may be thrown in her direction. She also makes sure that he eats it all, and, if for some reason he is unable to finish, she does her very best to step-up to the task.

    She’s a good dog.
