    Ingredients

    • 2 T vegetable oil
    • 1 lb. lean pork, cut into 1/2" cubes
    • 4 green onions, sliced thin
    • 1 small jalapeno, seeds removed and finely chopped
    • 2 cloves garlic, finely chopped
    • 32 oz. low sodium chicken broth
    • 2 15.5 oz. cans great northern beans, drained and rinsed
    • 1/2 c. chopped fresh cilantro
    • 1/4 c. chopped fresh parsley
    • salt & pepper to taste

    Directions

    1. In a large saucepan, heat oil over medium high heat until it shimmers. Add pork and cook about 5 minutes until browned. Add onions, garlic and jalapeno. Cook and stir about 1 minute, do not brown garlic. Add broth and beans. Heat to boiling and reduce heat. Cover and simmer for about 10 minutes. Stir in cilantro and parsley. Cook until heated through.
