  • Ham & Bean Stew

    This is a hearty and healthy Spring stew. It is easy to make, can be made in advance and stores in the refrigerated for several days.

    Ingredients

    • 1 pound Northern beans, pinto beans or your favorite bean
    • 12 cups water
    • 1 pound ham slice with bone like Cook's from the Jewel
    • 1 large onion, diced
    • 2 large garlic cloves, minced
    • 1 t black pepper
    • 1/4 cup chopped fresh parsley for garnish

    Directions

    1. Soak the beans in water overnight. Drain and pick through to remove any debris. Chop ham into bite sized pieces. Combine beans, water, onion, garlic, ham, ham bone and pepper in a large Dutch oven or stock pot. Bring to boil. Reduce heat and simmer until beans are very tender. Add water if necessary to keep beans covered. When beans are tender, remove and discard the ham bone. Remove 1/2 bean mixture to a small bowl and mash with a potato masher. Return the mashed beans to the pot and stir to combine. Garnish with chopped fresh parsley. Serve with a green salad and a crusty bread for dipping.
