Porcupine Meatballs
My mother's recipe for old fashioned meatballs with raw rice cooked in them. The meatballs are browned, then simmered in the oven in a tomato sauce that makes them tender and flavorful. The rice cooks and sticks out of the meatballs giving them a "porcupine" effect. Kids love them! Ingredients
- 1 pound ground beef
- 3/4 cup raw rice
- 1 large can tomato sauce (14 ounces)
- 1 tomato sauce can of water
- 2 tablespoons chopped fresh basil
- 1 small onion, chopped
- salt and pepper to taste
Directions
- Mix meat, rice, onion, salt, pepper, and 2 tablespoons tomato sauce together.
- Form into firm balls 1 1/2inches in diameter. Brown in hot skillet in small amount of fat. Remove meatballs when brown.
- Mix tomato sauce, water, and basil together. Pour sauce mixture over the meatballs that have been put in an oven-safe casserole dish.
- Cover with foil and bake one hour at 350 degrees.
