Porcupine Meatballs

My mother's recipe for old fashioned meatballs with raw rice cooked in them. The meatballs are browned, then simmered in the oven in a tomato sauce that makes them tender and flavorful. The rice cooks and sticks out of the meatballs giving them a "porcupine" effect. Kids love them!

Ingredients

  • 1 pound ground beef
  • 3/4 cup raw rice
  • 1 large can tomato sauce (14 ounces)
  • 1 tomato sauce can of water
  • 2 tablespoons chopped fresh basil
  • 1 small onion, chopped
  • salt and pepper to taste

Directions

  1. Mix meat, rice, onion, salt, pepper, and 2 tablespoons tomato sauce together.
  2. Form into firm balls 1 1/2inches in diameter. Brown in hot skillet in small amount of fat. Remove meatballs when brown.
  3. Mix tomato sauce, water, and basil together. Pour sauce mixture over the meatballs that have been put in an oven-safe casserole dish.
  4. Cover with foil and bake one hour at 350 degrees.
