Pollo Cubano
Marinated chicken braised in white wine and veggies. Serve with rice or other starchy vegetable. Yum! Ingredients
- 8 pieces skin on, bone in chicken pieces
- Marinade:
- 6 cloves smashed garlic cloves
- 3 tbs. each of orange juice and fresh lime juice
- 2 tsp. salt
- 1/2 tsp. pepper
- 2 tbs. olive oil
- 1 finely chopped onion
- 1 bell pepper (any color)
- 1 cup dry white wine
- 1 bay leaf
Directions
- Prep the marinade and put in the chicken. Refrigerate, covered,for 12 hours or more.
- Heat oven to 350 F.
- Place chicken in a baking dish, pour on wine and scatter the vegiies around the chicken, cover
- Bake 40 minutes, remove lid and continur cooking until liquid id absorbed.
