    Pink Lemonade Poke Cake

    Cake mix recipe for a party cake for kids, bridal or baby shower. Decorate with sprinkles, strawberries, raspberries, or pink sugar.

    Ingredients

    • 1 box white cake mix
    • 3/4 cups water
    • 1/4 cup lemon juice or 2 oz. pink lemonade concentrate
    • 3 eggs
    • 1/3 cup unsalted butter
    • red food coloring
    • Glaze: 4 oz. pink lemonade concentrate
    • 3/4 cup powdered sugar
    • Icing: canned white icing

    Directions

    1. Heat oven to 350 F.
    2. Beat eggs, add liquids to eggs.
    3. Melt butter, add to bowl with cake mix.
    4. Beat until smooth.
    5. Using one drop red food coloring at a time, add to mix, beat.
    6. Pour into greased, floured 9x13 pan.
    7. Bake 30-35 minutes.
    8. Let cool, then poke 30-40 holes in the top with a bamboo skewer.
    9. In a mixing bowl, combine room temp pink lemonade concentrate with powdered sugar. Using a hand mixer, combine well.
    10. Pour on cake.
    11. Remove metal cover from canned icing, and microwave 20 seconds. Stir well.
    12. Icing should be easy to stir.
    13. Pour on cake, decorate.
