Pineapple Fruit Cake
A very moist fruit cake, easy to make and could easily replace a traditional Christmas or Birthday cake. Ingredients
- 6oz dark brown sugar
- 4oz Stork margarine or butter
- Small tin pineapple pieces and juice
- 12oz mixed fruit
- 4oz glace cherries halved
- 2 large eggs beaten
- 8oz Self raising flour
- 1/2 teaspoon mixed baking spice
Directions
- Place ingredients 1 - 5 into a saucepan and cook - not boil, for a few minutes and allow to cool
- Add eggs, flour and spice - mix well
- Cook in a lined 2lb loaf tin for approximately 1hr 15 minutes in a 150-160c fan oven or 170c conventional oven
