Pineapple Cheese Salad Ring
Ingredients
- 1/2 pound cottage cheese
- 1 c. whipped cream
- 1 tbsp. gelatin
- 1/2 c. water
- 2 1/2 c. grated pineapple, liquid removed
- 2 tbsp. mayonnaise
- 1/2 teaspoon salt
Directions
- Rub cottage cheese through a sieve; add in salt. Soak gelatin in cool water and dissolve over warm water. Add in cheese; mix well. Add in mayonnaise, pineapple, and cream. Refrigeratein ring till hard. When ready, unmold, and serve with a dressing of mayonnaise plus little lemon juice and a little whipped cream. Use fresh fruit in center of ring.
