Pineapple Ambrosia Salad
Traditionally this has been served as a side, but it'd be great as a lighter dessert too. Ingredients
- 1 (15 ounce.) can pineapple tidbits
- 1 banana, sliced
- 1 c. seedless grapes
- 3/4 c. flaked coconut
- 1 c. miniature marshmallows
- 1/2 c. minced pecans
- 1 c. lowfat sour cream
Directions
- Drain pineapple, reserving 2 Tbsp. juice.
- Combine banana, grapes, coconut, marshmallows and pecans in bowl; mix lightly.
- Blend reserved pineapple juice and lowfat sour cream in small bowl. Pour over fruit mix; mix well.
- Refrigerate until serving time.
