Pineapple Ambrosia Salad

Traditionally this has been served as a side, but it'd be great as a lighter dessert too.

Ingredients

  • 1 (15 ounce.) can pineapple tidbits
  • 1 banana, sliced
  • 1 c. seedless grapes
  • 3/4 c. flaked coconut
  • 1 c. miniature marshmallows
  • 1/2 c. minced pecans
  • 1 c. lowfat sour cream

Directions

  1. Drain pineapple, reserving 2 Tbsp. juice.
  2. Combine banana, grapes, coconut, marshmallows and pecans in bowl; mix lightly.
  3. Blend reserved pineapple juice and lowfat sour cream in small bowl. Pour over fruit mix; mix well.
  4. Refrigerate until serving time.
