Peppered Beef Soup
I cant remember where I got this recipe but its a favorite. Ingredients
- 1 roast (about 4 lbs)
- 1/2 cup flour
- 2 Tsp olive oil
- 1 med onion chopped
- 6 cloves garlic largely minced
- 2 large potatoes diced
- 1 16oz package of baby carrots
- 2 bottles of beer or 3 cups beef broth dependeding on what you prefer
- 2 Tsp vinegar
- 2 Tsp worchestershire sauce
- 2 Tsp parsley flakes
- 1 Tsp beef bouillon
- 3 tsp pepper
- 4 bay leaves
- salt to taste
Directions
- Cover the roast with the flour and brown in a skillet over high heat.
- Add all the ingredients to a slow cooker and simmer for 7-8 hours
