Pepper Seared Halibut With Vodka Caper Cream Sauce
Ingredients
- 1 x (8-oz) halibut filet
- 1 x to 2 cloves garlic
- 2 Tbsp. nonpareil capers
- 1/4 c. of vodka
- 1 Tbsp. butter
- 1 c. manufacturing cream
- Fresh parsley, minced
- Salt and pepper, to taste
- 1 Tbsp. extra virgin olive oil
Directions
- Heat extra virgin olive oil in skillet. Lightly coat halibut fillet with fresh grnd pepper and sear both sides in extra virgin olive oil. Drain excess oil and add in garlic, capers and parsley. Deglaze pan with vodka reducing to one-third. Add in butter and cream.
- Reduce till thick.
- Serves two.
