Halibut With Mustard Caper Sauce
Ingredients
- 1 1/4 lb Halibut Salt Freshly grnd pepper
- 1/4 c. Flour
- 2 Tbsp. Butter
- 1/2 c. Lowfat milk or possibly cream
- 1 sm shallot or possibly green onion
- 1/2 c. Dry Vermouth
- 1 1/2 Tbsp. Liquid removed capers
- 2 tsp Dijon-style mustard
Directions
- Heat butter in a large skillet over med. heat. Salt, pepper and flour fish.
- Pan fry 1 1/2 to 3 min on each side till fish tests done. Arrange on platter and keep hot. Saute/fry onion or possibly shallot till soft and transparent.
- Add in vermouth, capers and mustard. Stir and boil 2-3 min, add in lowfat milk or possibly cream, stirring frequently, cook over med. high heat till sauce reduces and thickens sufficient to coat spoon lightly. Spoon sauce over fish and serve.
