Pecan Encrusted Spinach Salad
This is a Big Seller at work. Great COmbo of ingredients to create a quick Yummy Meal Ingredients
- 4 5 oz Boneless Skinless Chicken Breats
- 1 Cup Bread Crumbs
- 1 tsp Cayenne Pepper
- 1 tsp pepper and Salt
- 1 tbsp Lemon Zest
- 3/4 Cup Ground Pecans
- 3 Eggs
- 1/4 Cup Milk
- 1 Cup Flour
- 8 Cups Spinach
- 1/2 Cup Bacon BIts
- 4 Boiled Eggs sliced
- 1/4 Cup Fine Diced Red onion
- 1 Sm Can Mandarian orange segments
- Dressing:
- 1/4 Cup Honey
- 1/4 Cup Mayo
- 2 tbsp Lemon Juice
- 1/2 Cup Mustard
Directions
- SLice into Either Chunks or strips. mix bread crumbs, Ground pecan, chopped Lemon Zest, Salt, pepper, and cayenne in a bowl, set aside.
- mix the 2 eggs and milk together in a differnt bowl. Dredge the Chicken into the flour then into the egg then coat well with the Bread crumb mixture. WHen Down that. Heat a pan on Medium with a little bit of Olive oil. Cook breaded chicken Til done.
- While it cooks.
- Divide spinch, red onion, boiled eggs, bacon and mandarian between 4 bowls, then Mix Honey, Mustard, lemon Juice and Mayo in a bowl.
- Divide the cooked breaded chicken among the four bowls then Drizzle the Dressing over the Salads.
- Enjoy!
