  • Pear salad with salted almonds and honey vinaigrette

    Ingredients

    • 3 Asian pears, washed
    • 3 quarts washed salad greens, any variety
    • 1 small red onion (ideally, ramps!)
    • ¼ cup red wine vinegar
    • 1 Tablespoon sugar
    • ½ teaspoon salt
    • lemon juice
    • ¼ cup almonds, toasted in a little olive oil and salted with grey salt
    • ½ cup olive oil
    • 1 teaspoon honey
    • 1 shallot, minced
    • 1 small clove garlic, minced

    Directions

    1. Peel the onion and cut it into very thin slices and place in a small bowl, season with salt, and reserve.
    2. Heat the vinegar and sugar in a small saucepan until dissolved, and pour over sliced onions.
    3. Allow the onions to cool completely.
    4. Meanwhile, cut the pears into large matchsticks, about ½ inch square by 2 inches long.
    5. Toss with a little lemon juice and reserve.
    6. In a large bowl, combine the garlic, shallot, honey and 2 Tablespoons of the onion liquid, season, and whisk together.
    7. Slowly drizzle in the olive oil and whisk until combined.
    8. Add the pears and the lettuces and toss gently to dress.
    9. Serve on a clean plate, finishing with the almonds.
