  • Peanut Butter Toffee Bars

    Ingredients

    • 2 cups quick-cooking oats
    • 2 cups flour
    • 1 cup firmly packed brown sugar
    • 1/2 cup chopped roasted peanuts
    • 3/4 teaspoon baking soda
    • 1 1/4 cup butter, softened
    • 1 (8 ounce) package cream cheese, softened
    • 3/4 cup crunchy peanut butter
    • 1/3 cup sugar
    • 1 large egg
    • 1 cup toffee bits

    Directions

    1. Preheat the oven to 350 F
    2. Line a 13 x 9 inch baking pan with aluminum foil
    3. Spray with nonstick cooking spray
    4. In a large bowl, combine the oats, flour, brown sugar, peanuts, and the baking soda
    5. Using a pastry blender, cut in the butter until a mixture is crumbly
    6. Press half of the oat mixture firmly into the bottom of the prepared pan
    7. Bake for 20 minutes
    8. In a medium bowl, beat the cream cheese, peanut butter, sugar, and egg at medium speed using a mixer until combined
    9. Spoon the mixture over the prepared crust
    10. Spread to the edges
    11. Sprinkle evenly with the toffee bits
    12. Cover evenly with the remaining half of the oat mixture
    13. Bake for 20 to 25 minutes or until golden brown
    14. Let cool completely before serving
