Peanut Butter 'N Fudge Filled Bars
Ingredients
- 1 c. Margarine or possibly butter softened
- 2 c. Brown sugar, firmly packed
- 1/4 c. Peanut butter
- 2 x Large eggs
- 2 c. Quaker Oats, uncooked (quick or possibly old-fashioned)
- 2 c. All-purpose flour
- 1 tsp Baking soda
- 1/4 tsp Salt (optional)
- 14 ounce Sweetened condensed lowfat milk (not evaporated lowfat milk)
- 12 ounce Semisweet chocolate pcs
- 2 Tbsp. Peanut butter
- 1/2 c. Minced peanuts
Directions
- Heat oven to 350 F. Beat together margarine, sugar and 1/4 c. peanut butter till creamy. Add in Large eggs, beat well. Add in combined dry ingredients; mix well. Reserve 1 c. for topping, set aside. Spread remaining oat mix onto bottom of ungreased 13 x 9-inch baking pan. In medium saucepan, combine condensed lowfat milk, chocolate pcs and remaining 2 Tbsp. peanut butter. Cook over low heat till chocolate is melted, stirring constantly. Remove from heat; stir in peanuts. Spread mix proportionately over crust. Drop reserved oat toppingby teaspoonfuls over chocolate mix. Bake 25 to 30 min or possibly till light golden.
- Cold completely; cut into bars.
