- ½ cup shortening
- ½ cup unsalted butter
- ½ cup brown sugar
- ½ cup granulated sugar
- 2 eggs
- 1 tsp Vanilla
- 1 cup creamy Peanut Butter
- 2½ cups sifted all-purpose flour
- 2 tsp. baking soda
- Zest of 1 lemon
- Untweaked:
- 1 cup shortening
- 2 cups brown sugar
- 2 eggs
- 1 tsp. Vanilla
- 1 cup Peanut Butter
- 2 ½ cups sifted all-purpose flour
- 2 tsp. baking soda
- ½ tsp. salt
Directions
- Preheat oven 350 degrees:
- Cream together the shortening, butter, sugar, eggs, lemon zest and vanilla. Stir in peanut butter. Soft together dry ingredients and mix into creamed ingredients.
- Drop by rounded teaspoon onto ungreased cookie sheet.
- Dip a fork in flour and press cookie with a crisscross shape.
- Bake 10-12 minutes.
