Peanut Butter Cookies
Ingredients
- 2 1/2 c. flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 sticks butter, softened
- 1 cup peanut butter
- 3/4 c. sugar
- 3/4 c. packed brown sugar
- 2 eggs
- More Sugar for rolling
Directions
- Whisk together the flour, soda, powder, and salt.
- Beat the butter, peanut butter, and both sugars for 2 minutes.
- One by one, add eggs; beat 2 minutes.
- Genty blend in dry ingredients.
- Divide in half, wrap and chill overnight.
- Shape scant TBSPs of dough into balls, roll in sugar, and place 2 inches apart on baking sheets.
- Press each with a fork.
- Bake at 350 for 12 minutes, until golden.
- Let rest for 2 minutes. Cool on rack.
