  • Filled Peanut Butter Cookies

    Ingredients

    • 12 ounce (1 Pk) Peanut Butter Morsels
    • 2 c. Unbleached All-Purpose Flour
    • 3/4 tsp Salt
    • 1/4 tsp Baking Soda
    • 1 c. Butter or possibly Margarine, Softened
    • 3/4 c. Firmly Packed Brown Sugar
    • 1/3 c. Granulated Sugar
    • 1 lrg Egg
    • 1 tsp Vanilla Extract
    • 1/2 c. Finely Minced Peanuts
    • 3 tsp Honey
    • 2 tsp Lowfat milk
    • 1/4 tsp Grnd Cinnamon
    • 2/3 c. Peanut Butter Morsels, Unmelted

    Directions

    1. Preheat the oven to 400 Degrees F. In a pan, heat the peanut butter morsels and set aside. In a small bowl, combine the flour, salt and baking soda and set aside. In a large mixing bowl, combine the butter, sugars, egg and vanilla. Beat on medium speed, of an electric mixer, till creamy.
    2. Blend in the melted peanut butter morsels. Gradually add in the flour mix.
    3. Shape into 1-inch balls and place 2 inches apart on ungreased cookie sheets. Press in the center of the cookies, with your thumb, and fill the center with 1/4 ts of the peanut butter filling mix. Bake in the oven for 7 to 10 min.
    4. PEANUT BUTTER FILLING:Combine the minced peanuts, honey, mil and cinnamon in a small bowl, blending well. Stir in the peanut butter morsels.
