  • Peach And Apricot Crisp

    Ingredients

    • 16 ounce Sliced peaches, liquid removed (canned)
    • 1/4 c. quick-cooking rolled oats
    • 3 tsp minced almonds
    • 2 tsp cool unsalted butter

    Directions

    1. 2 Tablespoons all-purpose flour 2 Tablespoons firmly packed light brown sugar 1/8 t almond extract2 Tablespoons minced dry apricots1 Tablespoons peach schnappsPreheat oven to 450 deg. F. and butter a 2-c. shallow baking dish Drain peaches in one layer on paper towels. In a small bowl blend oats, almonds, butter, flour, brown sugar, extract, and a healthy pinch salt till mix resembles coarse meal. In baking dish toss together peaches, Apricots and schnapps and sprinkle oat mix over fruit. Bake crisp in middle of oven 15 min, or possibly till top is crisp and golden brown.
    2. Serves 2. May be doubled.
