    Recipe for Banana Sesame Pancakes / Pazham Dosai

    You might be wondering what #SeedTheRiseChallengein the title of my blogpost is. Ita fundraising initiative set up by Mahindra Mahindra to improve the lives of farmers.Through this campaign, Mahindra is looking to raise Rs. 2 crores from the public for this cause - an amount which they will match through their own donation as well. All funds collected will go towards supporting 5 key NGO run projects that strategically aim at bettering the farmers' lives in varied ways including setting up drip irrigation, sustainable farming units and educating the girl child. I'm proud to be a part of this challenge and leverage my blog towards raising money for this noble cause. Please do not miss the details at the end of the post.

    India is the leader producer of bananas in the world. And I thought what better ingredient to use in a recipe dedicated to the farmers and the #seedtherisechallenge.

    You might have read my post on growing bananas at home and the exercise in patience it was to watch the bananas form, grow and finally ready to be harvested.

    This simple dosai recipe needs no grinding or fermenting, so on that count, it can be called an instant banana dosa. Fortified with sesame seeds, flavoured with the strong aromas of green cardamom, sweetness from bananas and powdered jaggery, it is a wholesome delicious snack to nibble on. If your kid does not like the strong flavour of cardamom, leave it out or use vanilla extract instead and these can pass off as healthy banana pancakes.

    Make small bite sized pancakes and serve them warm with a drizzle of honey, or to make them extra 'banana-y', topped with these caramelized bananas.

    On a skillet, lightly toast the sesame seeds. Allow to cool.

    In a mixer jar, grind the sesame seeds, crushed jaggery and seeds from cardamom pods into a coarse powder

    In a large bowl, add the peeled bananas and mash coarsely with a fork. Add the flours, the jaggery-sesame-cardamom mix and mix well with the fork.

    Add the milk and whisk with a fork until you get a thick batter. You will find small bits of banana in the batter, which you can leave as it is.

    Add 1 tbsp melted ghee and stir to mix well.

    Keep covered and let it sit for 15-20 minutes.

    Heat a non stick pan, grease with ghee.

    Pour 1 tablespoon of batter per dosa/pancake, do not spread /thin out. You can make 4-5 dosas / pancakes at a time depending on the size of the skillet/tava.

    A bite of these pancakes brings forth a burst of aromas and flavours from ripe bananas and cardamom. Rice flour adds a bit of crispness to the dosas and the small chunks of bananas in the batter get all the more delicious after cooking the dosas.

    Vegan Banana Dosai / Pancakes - To make it vegan, add water or soy milk to prepare batter and use coconut oil instead of ghee.

    We've all read about how our farmers have been adversely effected by the bad weather but we never know how we can lend a helping hand.
